MANUFACTURING METHODS
While some of our fruit fillings are whole, other are diced, sliced or cubed. The process by which the filling is produced plays a large role in maintaining the integrity of the finished product. We manufacture fillings using two methods:
Kettle Cooked Filling
The filling is made in large kettles specifically designed to provide gentle agitation during cooking that minimizes damage to the fruit pieces.
Retort Filling
Lawrence Foods has built an enviable reputation for the high-quality outcome of our retort process, which protects fruit from damage caused by mechanical agitation. We are exclusive producers of retort fillings in plastic containers. These containers hold slightly more than a #10 can. This resealable and reusable container, with a tamper-evident film below the lid, seals in freshness and offers added convenience and versatility.
